Behind the Bar Cart: Meet Polly

Every great business has a story, and ours begins with a somewhat unexpected twist: Brady started brewing “decent” beer. (Yes, I said “decent”. The guy’s a genius, but his brewing skills took some time to ferment.) What started as an experiment in our kitchen quickly became a shared hobby that got us thinking—what if we kegged his creations? The next thing I knew, TikTok’s “For You” page was planting an even bigger idea: a charming Piaggio Ape transformed into a fully functional mobile bar.

After countless late-night chats and some deep dives into research, I realized this concept could be more than just a fleeting dream; it had real business potential. Armed with spreadsheets, diagrams, and an enthusiastic pitch, I presented my business plan to Brady, my closest friends, and my parents. The idea was met with excitement—and one of my friends, Sophie, came up with the perfect name: “Traveling Taps Wisconsin”.

Polly: The Star of Traveling Taps

We chose the Piaggio Ape for its Italian charm, but Polly earned her name after proving to be as “needy” as she was unique. Transforming her into a fully functional mobile bar she is today required determination, creativity, and no small amount of patience.

Polly’s upgrades were extensive. Brady swapped European keg fittings for American ones, installed a backsplash, and added polished brass taps and custom wooden handles. He even made her drivable for easy transportation and upgraded her refrigeration system. It was a team effort, and Polly is now the perfect blend of charm and functionality.

The Risk and Reward

Starting Traveling Taps wasn’t without its risks. At the time, I was a full-time student, and we were living on one income. Purchasing Polly meant betting our savings on a dream—but we believed in it.

Every late night spent perfecting Polly was worth it. She’s now a symbol of our dedication to creating memorable, interactive experiences that bring people together. Watching guests gather around her, captivated by her charm and the drinks she serves, is the ultimate reward for our hard work.

Polly’s Role in the Traveling Taps Experience

Polly does more than serve drinks; she elevates every event she attends. Whether it’s a wedding, a corporate gathering, or a backyard party, Polly draws people in with her vintage charm and functionality. From her polished brass taps to her custom design, she creates unforgettable moments for our clients and their guests.

For Brady and me, Polly represents more than a business venture. She’s a labor of love that allows us to share our passion for hospitality, creativity, and meaningful connections. She’s a reflection of our journey—from childhood sweethearts to business partners—and we couldn’t be prouder of what we’ve built together.
